Buttermilk Baking Mix (aka Bisquick)

Ingredients

  • 12 cups Whole Wheat Pastry Flour
  • 3 3/4 cups King Arthur White Flour
  • 1/4 cup + 2 Tbsp Baking Powder
  • 2 Tbsp Salt
  • 3/4 cup sugar (or evaporated cane juice)
  • 3 cups shortening
  • 1 1/2 cup buttermilk powder

Directions

Mix all ingredients until particles are small and uniform in size using a pastry cutter or Kitchenaid. Should look like corsely-ground cornmeal.

Store on a shelf in a tightly-covered container. Storage life is approximately 3 months or 6 months in fridge. Use it in place of Bisquick or Buttermilk Baking or Biscuit Mix.

Yield: 14 cups.
