Corn Chowder

Ingredients

1/2 lb bacon (or 2/3 c bacon bits and 2 Tbsp lard)

1/2 c chopped onion

1/2 c chopped celery

4c water, divided

2 c. diced or shredded potatoes

3/4 c. non-instant milk powder

2 Tbsp flour

1 tsp salt

1/4 tsp pepper

1 can cream-style corn or blended whole kernel corn

 

Directions

Fry bacon until crisp. Remove bacon and discard all but 2 Tbsp bacon grease (ignore if you are using bacon bits and lard). Saute onion and celery in reserved bacon grease (or 2 Tbsp lard). Add 3 cups of water and potatoes. Simmer until tender.

Blend 1 cup water, milk powder, flour, salt and pepper. Add mixture to pan of simmering potatoes. Add corn. Heat and sprinkle with reserved bacon (or bacon bits).
