Menu Plan for Week of 4/12/10 – 4/18/10

Monday April 12th

Breakfast: Croque Madame, OJ

Lunch: Leftover Roast Beef (cut up in quarter-sized pieces), BBQ sauce, Crackers, Havarti Cheese, Carrot Sticks

Dinner: Chicken Marbella a la Silver Palate w Jasmine Rice, Steamed Haricot Vert

 

Tuesday April 13th

Breakfast: Asparagus Omelet, Toast, OJ

Lunch: Sliced Smoked Turkey, Sliced Granny Smith Apple, Tomato, Maple Cream and Romaine Lettuce on Oat Bread, Root Chips (make extra)

Dinner: Spaghetti and Meatballs, Toasted Garlic Bread, Tossed Green Salad (pls double the entrée and freeze half)

 

Wednesday April 14th

Breakfast: Morning Glory Carrot Muffins, 2% Milk

Lunch: A Big Chef’s Salad, Cheese Crackers, Brownie

Dinner: Chicken with Artichokes & Garlic, Macaroni & Cheese

 

Thursday April 15th

Breakfast: Baked French Toast, 2% Milk

Lunch: Whole Foods Spinach/Artichoke Dip with cucumber slices on pumpernickel, Hard-boiled Egg

Dinner: Red Cabbage Stuffed with Lamb, Flageolet Beans

 

Friday April 16th

Breakfast: Egg White Frittata, Toast, OJ

Lunch: Mango-Chicken Salad with Romaine Lettuce in Whole Wheat Pita Pockets, Grapes, Cookie

Dinner: All-Green Vegetable Lasagne, Pistachio-Mint Qunioa Salad

 

Saturday April 17th

Breakfast: Vanilla Granola, Greek Yogurt, Honey or Blueberry Preserves

Lunch: Herbed Chicken Stew, Cornbread

Dinner: Scallops in a Lime-Ginger Sauce, New Spanish Rice, Key Lime Pie

 

Sunday April 18th

Breakfast: Lemon Pancakes, Sage Sausage Patties

Lunch: Corn Chowder with Bostonian Spice Bread

Dinner: Big Beef Burgers on the Grill, Roasted Asparagus, Strawberry Shortcake
