Menu Plan for the Week 2/14/10 – 2/20/10

I’ve gone all Pioneer Woman this week with a lot of male-friendly comfort food.

Sunday, February 14 (Valentine’s Day)

Breakfast: Breakfast Bowls

Early Lunch: Chicken Spaghetti Casserole, Bibb Lettuce Quarters with Maytag Blue Cheese Chunks & Cherry Tomatoes

Late Dinner: Beans & Cornbread. Optional garnishes: pickles, sour cream, red onion, grated cheese, pico de gallo.

Treat: Apple Tart

Monday, February 15 (President’s Day)

Breakfast: Bird’s Nest Eggs, Thick cut bacon, Whole Wheat toast, OJ

Lunch: Potato Skins with all the fixins (sour cream, sharp cheddar, thick cut bacon, scallions); Homemade Ranch Dressing

Dinner: Pulled pork in warm tortillas with cole slaw. Optional: sour cream, guacamole, pico de gallo, lime wedges. Pineapple Upside Down Cake

Tuesday, February 16 (A’s Birthday)

Breakfast: Mummy’s Marmalade Muffins, winter fruit salad

Lunch: Perfect chili OR Miracle soup, corn chips, carrot sticks

Dinner: Restaurant (A’s choice)

Wednesday, February 17

Breakfast: Steel-cut oatmeal with sliced almonds, dried cranberries and brown sugar

Lunch: Salmon-Pasta Salad, Crackers, Carrot sticks

Dinner: Cheap & Cheerful Cube Steak Hoagies; Thin, crispy onion strings + Leftover beans, corn chips and pico de gallo salsa

Thursday, February 18

Breakfast: Breakfast burritos

Lunch: Tuna salad sandwiches and orange slices, chocolate chip cookies

Dinner: Mac & Cheese, Haricot Vert Lyonnaise

Friday, February 19

Breakfast: Strawberry Banana Protein Smoothie, whole wheat toast

Lunch:  Lobster Bisque, Whole Wheat Crackers, Edemame

Dinner: Fried Chicken, Real Creamed Corn

Saturday, February 20

Breakfast: Food Porn Cinnamon Rolls, 2% Fage greek yogurt, berries

Lunch: Favorite Salad, Whole Wheat Bread

Dinner: Braised Beef Brisket, Potato Bundles, Bibb Wedge with Blue Cheese Dressing, Blackberry Cobbler
